Maple Salted Caramel Apple “Snickers”

I’ve been plugging away tonight, trying to get caught up on all the things that I’ve been pushing off, and all of a sudden I got the BIGGEST sweet tooth! If you follow me on Instagram, you will have seen me post multiple times that I am not a believer in diet culture. As an eating disorder professional, I’m a big believer in enjoying the foods that bring you joy without guilt and shame. (If you haven’t heard about HAES or intuitive eating, I highly recommend learning more!)

My kitchen is fairly empty at the moment because of work being busy this week, but I managed to create something delicious with things I already had on hand. Tonight, I made what I’m calling ‘Maple Salted Caramel Apple Snickers’! Continue reading below to learn how I made them.

Ingredients:

Maple Salted Caramel Sauce

  • 1 cup true maple syrup

  • 1/4 cup heavy whipping cream

  • 2 tbsp unsalted butter

  • 1/4 tsp sea salt

Apple Snickers

  • 3 apples, sliced horizontally with the core scooped out

  • 1.5 cups semisweet chocolate chips

  • Juice of 1 lemon

  • Unsalted peanuts (or salted if preferred)

Let’s Get Cooking!

  1. Let’s start with the maple salted caramel sauce! Find a medium pot and place it on the stove at medium to medium-high heat.

  2. Pour 1 cup of maple syrup in the pot and bring the maple syrup to a boil. Note: The syrup will begin to foam, and that is okay!

  3. Bring the syrup to 225 degrees Fahrenheit using a candy thermometer to check.

  4. Once your syrup reaches 225 degrees, remove from heat immediately and add the 2 tbsp butter and 1/4 cup heavy whipping cream.

  5. Stir until everything is melted - avoiding over stirring the mixture.

  6. Using a jar that is safe for high heat items, such as a mason jar, pour the caramel into the jar and let cool at room temperature.

  7. Once the caramel has cooled, place the jar in the refrigerator to allow it to thicken further.

  8. While the caramel is cooling, slice the apples horizontally so that they look like an ‘O’ shape. Scoop out the core of the apple.

  9. Place your apple slices on a plate and lightly brush the apple slices with the fresh lemon juice to keep them from browning.

  10. Placing the semisweet chocolate chips in a bowl, I chose to microwave the chocolate chips in 30 second increments, stirring after every 30 seconds. Keep doing this until fully melted and easy to combine.

  11. Once the chocolate is melted, get a plate or tray and line it with parchment paper.

  12. Using a spoon, dollop a small amount of chocolate on the parchment paper, creating a circle shape.

  13. Place an apple slice on top of the chocolate and gently press into the chocolate so that it sets.

  14. In the center of the apple that has been scooped out, place a few peanuts.

  15. Drizzle any remaining chocolate (if desired) and the maple salted caramel on top of the apple slices.

  16. Place the apple slices in the fridge to let the chocolate set.

  17. Enjoy!
