Homemade Thai Chili Sauce

I love Papa Murphy’s Thai Chicken Pizza, so much, but I’m really working hard to pause and be more intentional with my time. Truthfully, this is where my ‘homestead light’ journey started. It is harder (though not impossible) to work while cooking, so this was a great way for me to work on being present in the moment while also taking care of my wellbeing.

I have been craving Papa Murphy’s Thai Chicken Pizza for a while now, but sometimes it is hard for me to justify a $25 pizza. So, tonight we made it from scratch! I realized I didn’t have any Thai chili sauce at home though, which is the star of the show, so we learned to make some this evening. Here is what we did!

Ingredients:

  • 1 cup water

  • 1 cup rice vinegar

  • 1 cup granulated sugar or sugar alternative

  • 1/2 tsp ground ginger

  • 2 tsp hot chile pepper, minced (I didn’t have this tonight, so I substituted with cayenne pepper)

  • 2 tsp ketchup

  • 1 tsp minced garlic

  • 3 - 4 tsp cornstarch (more or less to thicken)

  • 2 tbsp water

Let’s Get Cooking!

  1. In a saucepan, combine the water and rice vinegar.

  2. Bring the water and rice vinegar mixture to a rapid boil over medium-high heat.

  3. Once the mixture begins boiling, stir in the sugar, ground ginger, chile pepper, ketchup, and minced garlic.

  4. Stir and allow to simmer for 8 minutes.

  5. Place the cornstarch and 2 tbsp water in a bowl and mix until combined.

  6. Add the cornstarch mixture to the saucepan and whisk until well combined.

  7. Remove the saucepan from the stove and allow to cool.

  8. Once the mixture has cooled, pour the mixture into a heat safe container, such as a mason jar, and refrigerate until needed.

  9. Enjoy!
